Hi, by pineapple wedges, do they mean chunks?  Just never seen
"wedges" canned.  In the curry recipe, 6 tsp is a lot.  For example, a
curried beef recipe I have calls for 1 tsp to 1 lb ground beef.
Similarly, a tuna salad calls for 1 tsp to one can tuna.  If a 2.5 lb
package of individually quick frozen chicken breasts includes about
seven pieces, the curry ratio seems awfully high.  I have made the
error of putting in as much curry as a misprint called for, too hot!
(Even worse, it is not often an error which can be easily corrected.)
NBP put out a nice cookbook of diabetic-friendly desserts a few years
ago. I believe some include sweetener, but others use lemon or orange
zest or juice, and a little honey to sweeten.  Speaking of
diabetic-friendly, the pasta recipe with mint, basil, and Parmesan
would probably be pretty awesome over spaghetti squash instead of
regular pasta!  I don't know carb counts, I'm just brainstorming a
little.
