While custard appears to be wet, as you put it, the knife test really does 
work.  The custard should be almost set but not runny.  When it is set, a knife 
will come out dry, not with any wetness on the blade.  I don't think a 
toothpick would be effective for testing a custard.  

I've tested pies like, pecan and pumpkin this way with success every time.  As 
some on this list know, I am an experienced cook and baker, so speak from long 
years of practice.
