VANILLA CREAM SYRUP

1/2 c. sugar
1/2 c. light corn syrup
1/2 c. whipping cream
1 tsp. vanilla
1 nectarine, diced (optional)

Combine sugar, corn syrup and cream in 1-quart pan. Cook, stirring constantly, over medium heat until sugar dissolved. Simmer 2 minutes or until syrup thickens slightly. Remove from heat. Stir in vanilla and nectarine. Serve over your favorite pancakes or waffles. Makes 1 cup.
