CHICKEN, BROCCOLI AND RED PEPPER CASSEROLE From Khadija

3 tbsp. oil
4-6 pieces boneless chicken breasts, cut into bite sized pieces
2 stalks broccoli, cut into bite sized pieces
1 red pepper, cut into strips
1 onion, chopped
1 can cream of chicken soup
1 cup mayonnaise
1 tbsp. lemon juice
1 ½ tsp. curry powder
½ tsp. pepper
1 tsp. Worcestershire sauce
1 ½ cups shredded cheddar cheese
½ cup bread crumbs
1 tbsp. butter or margarine

Method:
1. Grease a 9x13 inch baking dish. Set aside.
2. Cut chicken into bite sized pieces. Season with salt and pepper.
3. Heat 1 tbsp. oil in frying pan. Saute chicken until completely cooked.
Set aside.
4. Saute broccoli, red pepper and onion in 2 tbsp. oil.
5. Preheat oven to 350 F.
6. Combine chicken, vegetables, cream of chicken soup, mayonnaise, lemon
juice curry powder, pepper and Worcestershire sauce. Place in baking dish.
7. Sprinkle with cheese.
8. In a small bowl, combine bread crumbs and butter. Top casserole with
this mixture.
9. Bake for 30 minutes.
