First, grill the buns.  Here's how.  If you've got a grill with the great bun 
warmer feature, use it.  If you don't, preheat the grill to high, lightly 
butter the inside of the bun (or brush lightly with olive oil) and grill, face 
down, for about 2 minutes, until the interior of the bun is golden brown.  
Bagels are also great toasted on the grill, but George prefers to toast them 
dry and then spread them with a little butter or cream cheese.

Now for the burgers!

Serves 4.

Ingredients:

1 and a quarter pounds of lean ground beef.

1 half teaspoon salt.

1 half teaspoon of fresh ground black pepper.

Seasoning of your choice such as Worcestershire sauce, hot sauce, barbecue 
sauce, or 1 teaspoon of your favorite dry rub.

4 slices of American, cheddar, Swiss, (about 4 ounces), or 1 fourth cup of 
crumbled blue or goat cheese.

4 toasted buns.
4 beefsteak tomato slices.

4 leaves of romaine lettuce.

Method

1.  Preheat the grill to high and spray with nonstick spray.

2.  Put the beef in a medium bowl and add the salt, pepper and your preferred 
seasonings.  Using a fork, mix the seasonings into the meat and then, with your 
hands, form the mixture into 4 patties, each about 1 inch thick.

3.  Grill the patties (in batches if necessary, depending upon the size of your 
grill) for about 3 minutes for medium-rare (or a minute or two longer if you 
prefer a medium or well-done burger.)  A medium-rare burger will be browned, 
with grill marks, but still feel slightly soft when poked.  A medium burger 
will feel a bit firmer, and a well-done burger will be absolutely firm to the 
touch.  When in doubt, just cut into one of the burgers and check inside to 
make sure it's cooked how you like it.  Lay the cheese over the burgers and 
lower the grill.  Grill for 30 seconds, just until the cheese melts.

4.  Set the burgers onto the bottom halves of the buns, add a slice of tomato 
and a leaf of lettuce to each burger, and cover with the top of the buns.  
Serve immediately.
