Pumpkin Bars

For Bars:

 

4 eggs

 

1 2/3 cup granulated sugar

 

1 cup vegetable oil

 

1 fifteen ounce can pumpkin

 

2 cups sifted All Purpose Flour

 

2 tsp. baking powder

 

2 tsp. ground cinnamon

 

1 tsp. salt

 

1 tsp. baking soda

 

 

For Icing:

 

8 ounce package of cream cheese softened

 

1/2 cup butter, softened

 

2 cups sifted powdered sugar

 

1 tsp. vanilla

 

Directions: Preheat oven to 350 degrees. 

With a mixer on medium speed combine eggs, sugar, oil and pumpkin until
fluffy. Stir together flour, baking powder, cinnamon and baking soda then
add to pumpkin mixture on low speed combine batter until smooth. Spread
batter into 9 by 13 inch greased baking dish. Bake for 30 minutes or until
tooth pick inserted comes out clean. Cool completely before icing. 

 

For Icing:

Combine butter with cream cheese in mixer on low speed until well blended
and smooth. Add sugar and mix on low until combined. Stir in vanilla until
well blended. Spread on cool pumpkin cake then cut into squares.
