2 cups cornbread stuffing cubes 1/2 pound sausage meat, cooked, drained and crumbled 1 cup Ocean Spray® Fresh or Frozen Cranberries 1/2 cup diced onion 1/3 cup chopped pecans 2 teaspoons thyme 1/2 cup chicken broth Directions: Preheat oven to 350ºF. Combine all ingredients, except chicken broth, in a medium casserole dish. Add chicken broth; mix well. Add more chicken broth for a moister stuffing. Cover and bake for 30 minutes or until heated through. Makes 3 cups. Cranberry Mousse Ingredients: 1 cup Ocean Spray® Cranberry Juice Cocktail 1 3-ounce package raspberry-flavored gelatin 1 14-ounce can Ocean Spray® Jellied Cranberry Sauce 2 cups frozen non-dairy whipped topping, thawed Directions: Heat cranberry juice cocktail to boiling in a saucepan. Remove from heat and stir in raspberry gelatin until dissolved; transfer to a large mixing bowl. Using an electric mixer on high speed, beat cranberry sauce in a small bowl for 1 minute. Stir into gelatin mixture. Chill until mixture begins to thicken, but not set. Gently mix in whipped topping, using a rubber scraper. Spoon into serving dishes or prepared pie shell.
