Christmas Morning Muffins


2 1/2 cups flour

3 teaspoons cinnamon

2 teaspoons baking soda

3 eggs

1 cup applesauce

1/2 cup olive oil

1 teaspoon vanilla

2 cups grated carrots

1 medium apple grated, optional

1 can of crushed pineapple, drained

1/2 cup flaked coconut

1 cup raisins

1 cup chopped walnuts



Method: In a bowl combine the first five ingredients. In another bowl

combine the eggs, applesauce, oil and vanilla. Stir the dry ingredients

until moistened.

Stir in the carrots, apple, pineapple, coconut, raisins and nuts. Fill

greased muffin pans 2/3 full. Bake at 350 F for 20 minutes.





Raspberry Chocolate Balls



1 (8-ounce) package cream cheese, softened

1 cup (8-ounces) chocolate chips, melted

1 cup chocolat cookie crumbs

1/4 cup seedless raspberry preserves



*I also substitute orange marmalade for a change of flavour.

*1 teaspoon orange flavouring.



½ cup  chocolate cookie crumbs   plus 2 tablespoons unsweetened cocoa 
powder -for coating


Combine crumbs and powder in seperate bowl for cookie rolling later.



1. Combine cream cheese and chocolate. Mix until

well-blended. Stir in crumbs and preserves.

2. Place in freezer for 15 to 30 minutes to thicken mixture.

3. Roll into one inch balls.  Roll each ball in cookie crumbs to coat.

4. Store in sealed container in fridge.

*As you make the balls you may need to take the bowl of mixture in and out 
of the freezer to prevent dough becoming to sticky.
