Six minute  microwave  Fudge

Ingredients:

2 12-ounce packages of chocolate chips  or your choice of chips
1 can Eagle Brand milk
1  seven ounce jar of marshmallow cream.

Method:

Put all this in a bowl together and stir it around.
Put the bowl in the microwave for 3 minutes on high. Remove, stir it all very well. Return to microwave for three more minutes at full power, remove. Then add one teaspoon of
vanilla and stir well.
Butter bottom and sides of a 9 by 13 inch pan, and pour the microwaved fudge into it, or, for thicker fudge, use a 9 by 9 inch pan. If you like nuts in your fudge, you may add some chopped pecans, or walnuts in when you add the vanilla, and stir well. Put pan in refrigerator for several hours or overnight, then take out and cut in squares. Enjoy!

A note on microwaving: I have a 900 watt oven, and using full power will overcook this fudge, and it won't come out right, so you might have to use a lower power setting, discovered through experimentation. Maybe this will help you judge: When I microwave a bag of popcorn, it takes 1 minute 23 seconds, rather than the usual amount of time.

Incredible Fudge

Ingredients:

2 pounds semisweet chocolate, chopped, or semisweet chocolate chips
1 pint ice cream, slightly thawed (Chocolate is best)
1 cup pecans, finely chopped (optional)

Directions:

Line an 8 or 9-inch square pan with foil and lightly butter the foil.
Place chopped chocolate in medium size glass mixing bowl. Microwave on full power for 1 minute and 45 seconds. Stir. Add thawed ice cream (any type but vanilla) and beat until smooth. Stir in nuts, if desired. Turn into prepared pan. Refrigerate until firm; cut into squares.

History: My great grandparents did not like the methods that Adolf Hitler was using to gain political power in Germany, and they figured that there would be trouble. So they came to the United States with their daughter. Shortly after they arrived, they ate dinner at the Waldorf Astoria hotel in New York. Their daughter had a piece of fudge for dessert and remarked on how good it was to the waitress, and asked for the recipe. To their surprise, when they went to pay the bill at the register, the head chef came out and handed my grandmother a hand written copy of the fudge, and it has been in our family ever since. A great Christmas traditional fudge recipe:


Granny's fudge
This is a lot of wrist work, and the fudge is very thick! It makes 5 pounds.

Ingredients:

4 cups of sugar
1 cup of milk
2 teaspoons of vanilla
100 little, or 20 large,  marshmallows
1 cup of butter
24 ounces of chocolate chips
3 cups chopped walnuts
4 ounces of unsweetened chocolate

Method:

Mix sugar, milk, vanilla, butter and bring it to a boil in a large sauce pan.
Boil for 2 minutes and remove from heat.
Immediately add, in order, one at a time:
Marshmallows, stir until melted.
Chocolate chips, stir until melted.
Chopped nuts.
Unsweetened chocolate, stir until melted.
Pour into 9x13 inch pan and chill.
Cut into squares.

I had made one last year and it came out crappy!!! Yuck
