Got this from a friend.

She doubles  this when she make it.

Cheesy Potato Soup

1/2 cup chopped onion
6 large potatoes, diced
2 tbsp butter
8 ounces sour cream
1/2 pound velveeta
water
2 chicken bouillon cubes
salt/pepper to taste
chives.

Cook chopped onion in butter until wilted. Add diced potatoes and enough 
water to just cover potatoes. Add bouillon and boil gently just until 
potatoes are cooked. Do not overcook. Do not drain. Cube cheese and stir 
into the hot potatoes leaving soup on low heat until melted. Add sour cream 
and salt for taste . Top with freshly ground pepper, cooked crumbled bacon 
and chives.
