Hi. This is the meatloaf recipe that I've made up myself. The topping
however, is a recipe that my uncle gave to me. I used his entire meatloaf
recipe one time, but hehehehe, decided mine was better, but I liked the
topping he used! 

Once again, I don't have an actual recipe that I follow, I just throw this
together. I judge it according to the way the mixture feels in my hands . I
don't really measure the ketchup in the meat mixture. I just give the bottle
a couple of good squeezes, but I'm guessing at the amount for the list. The
last time I made this, I gave the topping a couple of good shakes of soy
sauce as well. That was good! Nothing smells more like home than a meatloaf
baking in the oven! 

 

2 pounds of ground beef

1/2 c. Italian bread crumbs

1 egg

1/2 of a bell pepper chopped, doesn't matter what color

1/2 c. onion, chopped

1 clove of garlic chopped

about 1/4 c. of ketchup or more

For Topping:

1/3 c. ketchup

2 table spoons of brown sugar

1 table spoon of mustard

 

Sauté the bell pepper, onion and garlic in a table spoon of oil until they
are soft. Remove from heat and set them aside to cool before you mix it with
your hands in the meat mixture. In a large bowl, combine remaining
ingredients. Make sure you mix it all real well with your hands, that's the
best way! Press all the meat mixture in a bread pan, smoothing out the top
with the palm of your hand. Bake at 350 for about an hour, remove from the
oven then pour the topping on. I use a basting brush to spread the topping.
Put it back in the oven and bake for another thirdy minutes.
