Tried to get a good restaurant yesterday for tomorrow and it is impossible,
unless you want to eat at 4 or 9 in the day, Which four is to early and nine
is to late. So to solve this problem, this is what I am going to do. Buy two
sirloin steaks about 1 1/4 inch thick. Cover them with olive oil, seasoning
one side with salt and pepper. Get out my 14 inch cast iron frying pan. Get
it as hot as I can, until it smokes. Add a little olive oil to coat it. and
layer in the steak, season side down, and let it sear for 3 minutes.
Season the other side with salt an pepper and flip it. searing it another 3
minutes. Than pop the steak in a preheated 375 degree oven for 3 to 4
minutes, until the steak reaches a temp of 145 degrees with a meat
thermometer, which my wife will have to check. Once it is at that
temperature, I will take the stakes on a warm plate and put a bit of butter
on them and put a foil tent over the steaks and let them set for 5 minutes.
Than we will get out the baked potatoes, steamed broccoli, pour our self a
glass of wine and be happy the restaurants were full.
