Hi, Sisi,

At Christmas time, when I am baking a lot of cookies, I make all of my dough 
first, wrap each kind in wax paper and keep it in the refrigerator until I am 
ready to bake.  Then I take it out to bring it up to room temperature because 
it is too hard to work otherwise.  I've never had any trouble with the cookies 
baking properly.
