Barbecued Chicken


Serves make about 2 cups

INGREDIENTS:
.       8-12 chicken thighs (or breasts...or a mixture) 
.       1 cup ketchup
.       1/4 cup Worcestershire
.       1/4 cup apple cider
.       1 Tbs paprika
.       1 Tbs chili powder
.       1 tsp fine ground black pepper
.       1 small white onion, peeled and finely diced
.       1 12-ounce beer
.       3 Tbs brown sugar



PROCEDURE:
In a deep stainless steel pot, combine the ketchup, Worcestershire, apple
cider vinegar, paprika, chili powder, finely ground black pepper and finely
diced white onion. Add the beer and brown sugar, whisk that up and turn the
heat on to medium or medium high. 

Once it comes to a boil, turn the heat down quite a bit, so it's at a nice
mellow simmer, and let it go like that for 10 minutes or so and then step
outside and start cooking the chicken on a pre-heated grill.

Keep your eye on those and turn them around as they cook and let them cook
until they're about 3/4 of the way done and, once the sauce has reduced by
about half, start brushing it on the chicken.

You'll want to brush the barbeque sauce on the partially cooked chicken 2 or
3 times, or even 4 times, as you're turning it around and the chicken is
finishing.

HINTS:
Substitute a cola for the beer but, if you do, leave out the brown sugar.
Add a Tablespoon of Dijon mustard, as the sauce is reducing, for a little
added kick.
