Try a search on your favorite search engine for crock-pot+barbecue+bourbon and see what that turns up. Remember that any meat can go in barbecue sauce, so don't worry about what kind of meat you're finding in the recipe. Also think about crock pot liners in your process. They really help clean-up, and that also make it easy to prepare something the night before and keep it in the fridge without running the risk of cracking your crock with a drastic temperature change. (And they make clean-up a breeze too)
