bread/pizza dough

Some one asked for bread recipes the other day and CITD was down. I couldn't post anyway.
First let me say I haven't the foggiest ideal how much flour is used.

For 1 loaf of bread or one 16 inch pizza.
Please notice the bread and pizza recipe has the same ingredients but
different method
About 3 cups of flour, more or less

1 1/4 cup of water
1 package or one tablespoon of bulk yeast
1 teaspoon of sugar or more if you must
1 teaspoon of salt

For the pizza just mix in sugar, yeast and water and enough flour to make a
moist dough that is moist but not sticky. After getting dough to feel like
the bottom of a baby rear end knead in the salt.  Grease bowl with
shortening and cover after rolling dough to coat with shortening. Now that
is grease the bowl lightly and roll dough and cover.


Let double in size. Pat dough out on a pizza pan or cookie sheet
Bake at 375 to 425 degrees for about 35 minutes
Bread.
Same ingredients.
Add sugar yeast, water and about 1 cup of flour Cover and let set for about
1/2 hours to get the yeast working. Now you can add 1 tablespoon of olive
oil to the bowl if desired.. If you do mix it in and add flour to made a
moist workable dough as above..  Knead well. Now grease bowl,cover with
towel, and let double in size. Take  dough out of bowl and flatten dough to
a rectangle 10 x 15 inches. fold end  on both side about a inch. Leaving a
10 x 13 inch rectangle. Now roll dough from the 10 inch side. Place cookie
sheet up side down and grease bottom of sheet. Put a little corn meal of the
sheet if you like. Put dough seam  side down on bottom of grease sheet and
cover. Let rise and bake in a pre heated oven @ 375 for 25 to 30 minutes. I
tap the bottom of the loaf and if it sounds hollow, it is done.
For the pizza, I feel the edge of the dough, if it feel crispy, it is done.

Be sure to knead dough well about 5 to ten minutes
