Your assumptions are all wrong. This particular technique requires a length of lumber be used on the dough once formed. The beating flattens the dough. After each stroke, the dough is folded and the process is repeated. The levening agent is yeast not baking soda or baking powder. I found one recipe in "Back To Eden" by Jethro Kloss and he also showed how to build an outdoor oven from wood and clay in which bread could be baked in that same book.
