Banana Nut Cookies
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 1/2 cups brown sugar
2 eggs
1 1/3 cups mashed banana, 4 bananas
1 teaspoon vanilla
2/3 cup chopped walnuts
For Cream Cheese Frosting:
4 ounces cream cheese, softened
2 tablespoons butter, softened
1/2 teaspoon vanilla
1 1/2 cups powdered sugar
Walnut halves, for garnish, optional
Sift together flour, baking soda and salt. Set aside. Cream butter with
sugar until light and fluffy. Add eggs. Beat well. Mix mashed banana and
vanilla into butter mixture. Stir in flour mixture. Add chopped walnuts.
Drop batter by heaping teaspoonfuls onto ungreased baking sheets. Bake at
375 degrees for 10 minutes. Cool completely on wire racks. For frosting,
beat cream cheese, butter and vanilla until smooth. Add powdered sugar. Beat
until soft and creamy. Spread on top of cooled cookies. Garnish with walnut
halves, if desired.
Microwave Directions:
Sift together flour, baking soda and salt. Set aside. Cream butter with
sugar until light and fluffy. Add eggs. Beat well. Mix mashed banana and
vanilla into butter mixture. Stir in flour mixture. Add chopped walnuts.
Drop batter by heaping teaspoonfuls onto microsafe baking sheet. Microwave
on high for 2 minutes until cookies are just firm. Let rest for a minute.
Prepare frosting by beating cream cheese, butter, vanilla and powdered sugar
together. Spread mixture onto cooled cookies. Garnish with a walnut, if
desired.
Makes 30 cookies.
