This soup sounds great, but I'm not familiar with quinoa.  What is it?

Had some quinoa I made with all the veggies goodies leftover from a couple
days ago and figured a good way of using the leftover quinoa was to make a
soup.
2 cans of chicken broth. Was going to use beef, but grabbed the wrong cans.
2 cans of water.
Chopped up a medium onion, a couple carrots,  a hand full of mini red sweet
peppers, and 2 sticks of celery. A couple cloves of garlic.
Sweat the veggies down and than add the broth and water and a can of stewed
tomatoes drained. After a while, added about 3 cups of chopped  spinach and
the cooked quinoa with the beans, peppers and onions.
Which made a healthy, quick meal. Plus it was vegetarian. By tomorrow my
meat eating spout will be clamoring for a meal with meat.
