Panzanella salad
Today we finely got enough tomatoes to make a panzanella salad.
It is a poor man's dish but is so good, people order it is restaurants when
possible.
It is simple to make at home.
As many tomatoes as you like with a equal amount of stale bread cubed into
large pieces. The same goes for the tomatoes. Now dice up a cucumber in the
bowl too. Add some fresh basil with the leave tore up. Some fresh oregano,
if you have it. Salt and pepper to taste. Now add 1/2 cup of the virgin
olive oil or first pressed.. Mix and let the oil soak into the bread for
about 10 minutes and have a meal for a king.
