Panzanella Salad:
Today I made the panzanella salad my way.
Use a bunch of tomatoes out of the garden.
1 8 inch cucumber
1 large sweet onion cut into thin onion rings, quartered.
pepperoni cut into thin strips
Some kind of bulk cheese, cut into small cubes
1 red sweet pepper cut into thin strips.
1/4 of a loaf of stale Italian bread, cut into large cubes. Than toasted in
olive oil and minced garlic
Fresh basil torn into small pieces. Fresh oregano, salt/pepper and red hot
crush pepper to taste.
Directions:
Cut up the tomatoes in half and if to large cut the half smaller. add the
quartered onion ring and peppers. Cube the cucumbers into bite size pieces.
Add seasoning, and add the toasted bread. Add one half cup of olive oil and
mix well. Let set a few minutes and enjoy. Put a bottle of vinegar for those
who like it on their Panzanella. I have a shake bottle for the vinegar.
