Pizza and sauce.
Tonight for dinner, and it is all of you guys fault for talking a bout pizza, Today I will be making a slightly chewy crust, just by adding a little olive oil to the dough.
For the dough
1 cup of water
a pinch of sugar (optional)
1 teaspoon of bulk bread yeast. Some day might thing of using wine yeast, just to see what happens. Mix the water, sugar, yeast and let it stand about 5 minutes. That way you can take a wine break. Now start adding the flour. My guess is about 2 1/2 to 3 cups. Add the flour in a little at a time until dough begins to form. Now add about 1 tablespoon of olive oil and mix it in with a little more flour. When the dough can be worked by hand, but still moist, add 1/2 teaspoon of salt. Add more flour to get a moist workable dough, it will feel just a hair sticky. Let the dough rest for another 5 minutes, for it is time for a little more wine. Now put a little shortening on your hands and knead the dough in your hands until the dough feels smooth. You might have to add a little more flour, but remember the dough is to be moist and feel just a little sticky.. Put the dough in a greased bowl and cover with a towel. It is now time to have another glass of red wine.
Good the wine break is over and it is time to make the sauce.
Here is the simple version.
1 can of whole or stewed tomatoes (14 1/2 ounces) Drain and crush them with your hands or use a pair of scissors to cut them up. Add as must garlic as you like. I use about 3 fresh clove. Mince the garlic and add to the tomatoes with some dried oregano, basil, salt and pepper, along with some crushed hot red pepper. Mix well and let it sit until you are ready for it. Than have another glass of red wine. Now that the dough doubled in size, pat out on a 16 inch pizza pan. I will be using my 16 inch cast iron skillet. This will make a thin crush pizza. Take a fork and stab the dough in several places. It will retard the rising of the dough in certain spots, giving a crispy crust
Put a very light coat of olive oil over the dough.
Now add the topping of your choice.
Tonight will be fried peppers/onion, sausage and cheese. I just use the Italian grated cheese. Don't care for mozzarella. Don't forget to let the pizza rest for about 20 minutes before popping it into a 375 F oven and it will take 30 to 35 minutes to come out just right. RJ
