The Chinese have a recipe called Crystal Chicken. Quite simply they put
a room temperature or refrigerated chicken into a pot of cold water and
cover the pot. The pot is put on a stove and set to boil. By the time
the pot gets to a rolling boil, the entire chicken is boiled. Leave the
chicken in the pot until the temperature drops to 160F and you've got it
cooked a bit more.
