vegetarian soup (cabbage) with soft rolls
This morning I seen a half a head of cabbage in the vegetable bin and figured why not.
I chopped up 3 large carrots
3 stick of celery
One large onion and threw it in the crockpot
Added 2 cans of beef broth
1 can of water
1 can of whole tomatoes
1 can of kidney beans.
Had the crock on high for a hour and cubed up some potatoes and added them to the pot. Found some frozen corn and peas and into the pot they went. Added a dash of pepper to fit my taste and about 2 hours later I turn the pot down to low as I put up 100 feet of snow fence About 8 1/2 hours later we had a good winter meal. Except I heard from my carnivorous wife, "Where is the beef"
But I settled her down when I brought out the fresh home made rolls.
I am not one who uses a measuring of any type if I can get out of it.
So here is the recipe for the rolls.
1 1/2 cup of water
a pinch of sugar
1 level tbs of yeast
1 cup of bread flour. Mix well.
Mix and let it stand until it starts bubbling. ( yeast starts working) About 1/2 hours or longer
Now start adding flour until it forms a sticky dough.
break one egg in a bowl and add 5 or six shakes of olive oil and beat well. My guess is about 2 tbs. Use a wooden spoon and add more flour until you can work dough by hand. Still a little on the sticky side but very workable. Now add 1 teaspoon salt and add more flour so you can work salt into dough, You will add a little more flour. The dough should be moist and a little sticky. Now take some shortening and put on hands and knead the dough. I do this in my hands, but you can do it on the counter. Just make sure dough is well kneaded. It takes me about 6 minutes to get a smooth moist dough. But I do let the dough rest about 5 minutes before kneading. Now Place dough in a lightly grease bowl and cover with a towel. In about 1 hour to 1 1/2 hours, Place dough on counter and stretch out to a 20 inch rope. Take a pair of scissors and cut into 20 equal pieces and roll like a meatball and place on a cookie sheet with parchment paper, and let double in size. Place in a pre-heated oven at 375 f degrees oven for 20 to 24 minutes or until tapped on bottom sounds hollow.
