Butternut squash
1 butternut squash, peeled seeded and cubed.
1 egg
1 tsp brown sugar
1/4 cup diced onions
1/2 c mayo
salt and pepper to taste.
Boil the squash and mash. Add the onion, mayo sugar, and salt and pepper to taste
.
Place in a casserole dish (2 quarts)
Melt 1 tbls of butter
Add 1/4 cup of crush saltine crackers
2 Tbls of grated parmesan cheese
Mix together and sprinkle over squash. Place in a 350 F oven and bake for 35 minutes.
