Here's what's cooking in the slow cooker right now as we speak for
consumption tomorrow. This is a great time to make black-eyed peas, as they
tend to be on sale right now. (I normally pay around $2.50/lb of the dried
ones, and my local Kroger had them on sale for a buck a pound, so of course
I stocked up)

Title: CrockPot Black-Eyed Peas

Servings: 7
1 lb black eyed peas, dried
½ lb bacon, sliced into pieces
1 tb kosher salt
1 md onion, minced
2 tb garlic, crushed
2 c corn, frozen
5 c water
3½ c rice, cooked
Soak and rinse peas and let sit overnight in water, then rinse and drain
again. Place beans in the slow cooker with the water,
salt, garlic, bacon, onion, and corn, and cook on high for 4-5 hours or
until the peas are tender and starting to break down. In
each bowl place ½ cup of rice with 2 cups of peas and stir to mix the rice
into the peas. (Do not try to just cook the rice in
the peas or it'll turn it into a thick sticky mass)
