I am one who always cooks chicken, -- if the chicken has bone in -- at 400. Usually, I cook it for one hour, but since you are doing smaller pieces of chicken, 45 minutes should be plenty. I do pork chops at 350 for one hour.
With a lot of meat, after cooking them, if you turn off the oven and let the meat sit in it for ten or fifteen minutes, the meat reabsorbs some of the juices and makes the meat tender and juicy.
