Chicken thighs in the crock pot
Four boneless skinless thighs
1 baseball size onion (cut into thin onion ring)
4 cloves of garlic (sliced thin)
Red sweet pepper cut into strips.
Seasoning
basil, oregano, red hot crushed pepper,, and salt/ pepper
1 can of whole or stewed tomatoes crushed.

Place liner in crockpot for easy clean up.
Break onion up in to rings and put half in bottom of pot. Place the chicken thighs on rings. Put slice garlic on chicken pieces.
Season with a little of seasoning to fit your taste.
Put rest of onion rings on top of chicken.
Put pepper strips on onions.
Add some seasoning to the tomatoes and crush. Pour tomatoes and sprinkle with grated cheese if you want. over everything and put lid on crock and turn on low and cook until done. About 6 hours.

   Put over a bed of egg noodles, spaghetti, or rice if desired.

P. S. I did slice up some pepperoni and added it to the dish after putting the garlic on the chicken before adding the onion rings.
