Hi everyone,
Personally, I would use milk instead of water. I also figure a blender could be used as well as a mixer to achieve the same results.

I copied the following from
www.about.com

Whipped butter is often served with specialty rolls at steak houses and family dinner restaurants. The consistency is creamy, making the butter easy to spread onto your favorite rolls or slices of bread.

This simple recipe uses one stick of butter and either milk or water to make a soft, spreading butter that can be stored in a covered bowl or plastic container.
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:
 a.. 1 stick (1/4 pound) butter, softened
b.. 2 tbsp milk or water
Preparation:
1.. After butter has softened to room temperature, put in small mixing bowl.

2.. Add either milk or water. Use mixer on slow then fast to whip butter until light and creamy.

3.. Store in refrigerator when not in use.
