I make this quit often for my husband and I. You can add more ingredients but 
we like it with just sliced tomatoes on the side and whole wheat toast.

Egg Casserole 

4 hash brown patties, rectangular shaped 
6 to 8 large eggs 
1 1/2  cup shredded cheddar cheese 
1/4 cup milk 
Salt and pepper 
Hot sauce, onion powder, optional 

Preheat oven to 350.
Grease a square cake pan.
Place the hash brown patties in the bottom of the pan, flattening them to 
completely cover the bottom of the pan.
Take about half of the shredded cheese and spread on top of the hash brown 
patties, pat down slightly.
In a bowl whisk the eggs and add the salt, pepper and I also put in a shake of 
hot sauce.
Pour this over the patties and cheese.
Sprinkle the remaining cheese on top and bake for 30 to 40 minutes.
Serves 4
Note: I cut this recipe in half and use a glass loaf pan as it fits 2 hash 
brown patties nicely.
To this recipe you can add any ingredient that you might find in an omelette 
but I would omit the milk if adding vegetables or meats like ham as it make the 
casserole not as firm. The servings will come out like pieces of cake.
