My Mother's meatloaf

My mom doesn't measure so these are approximate measurements. She gave
me this recipe twenty years or so ago. She still uses it and I do too: 1
pound hamburger 2 eggs About 1/2 cup seasoned Italian breadcrumbs
Seasoning of your choice Basil, oregano, garlic powder, a handful of
grated parmesan cheese A little tomato sauce or spaghetti sauce, some
chopped green pepper Combine all ingredients except sauce and green
pepper. Shape and place in a pie plate. My mom feels the loaf will brown
better that way. Put a little sauce and green pepper on top. You can use
onions. My mom doesn't like them so she doesn't use them. I've used
them. Bake at 350 degrees, for an hour or a bit more.

Italian Meat Loaf

I got this recipe from a cooking show that was on our local radio
station for 35 years. I used to call in to it as well as I got some good
recipes: Italian Meatloaf 1-1/2 pounds lean hamburg 3/4 cup Italian
bread crumbs 1 egg 1 cup spaghetti sauce, homemade or jarred, divided 1
4-ounce can mushrooms, drained 1 clove crushed garlic or 1/4 tsp garlic
powder 1/2 tsp basil 2 tbsp parmesan cheese 1 medium green pepper,
chopped 1 medium onion, chopped 1-1/2 tbsp oil Heat oil in skillet.
Simmer pepper, onion and garlic until half-cooked. Drain well. In a
bowl, mix meat, crumbs, egg, mushrooms and half the spaghetti sauce.Add
onion and pepper and mix well. Pour into loaf pan. Mix remaining sauce
with cheese and pour over the top of the loaf. Bake at 350 degrees, for
one hour.
