Hi, Blaine, I've never done turkey soup in a slow cooker, but if you have one big enough to hold the turkey carcass and enough water to cover it, I would think it would work well.
Here is what I do for turkey soup; it isn't a recipe really, because I don't have exact measurements; it depends on the size of the turkey carcass and how much time you have. Put the bones in a large stock pot along with a bay leaf or two, a stalk of celery with leaves, a carrot, (unpeeled, just cut off the ends) and an onion, (unpeeled) Cover all of this with water. Set the pot on the stove and bring to a boil. Let simmer on medium low heat for several hours. Strain the broth and add any meat back into the soup. Discard the vegetables as you will be adding more. The ones cooked with the bones are for flavor only. Now slice a few carrots, chop several stalks of celery, a good size onion or two and add these to the broth. You can also add rice or noodles later on. Add another bay leaf and some salt and pepper. Simmer until vegetables are tender. Add about 1/4 to 1/2 cup of rice about 20 minutes before serving. If you want to add noodles, it's better to cook them separately and then add them at the last minute. Hope this helps.
