Chop up a couple carrots
also some celery and a medium onion coarsely
Mince up 2 or 3 cloves of garlic
I am making this in the crockpot but it can be simmered on the stove top, if
you like.
Seeing it is a crockpot soup, I will add 1/4 cup of olive oil to a skillet
and soften up the above veggies.
Half way thru I added the minced garlic, plus black pepper to taste.
Put the veggies in the crockpot and add 8 cups of hot water and turn the
crockpot on high.
Now the one cup of lentils have been soaking in hot water for about 40
minutes, Rinse them well in a strainer.
Add them to the crokpot and give them a stir.
A couple bullion cubes, I use the bulk kind, added about 3 tablespoons.
Than add the seasoning to taste.
Oregano, basil, and a couple bay leaves.
When the lentils are soft, about 5 to 5.5 hours. or 1 hour on the stove, I
will serve with about a teaspoon of red wine vinegar per bowl and some feta
cheese.
Will add more water to the crockpot if needed during the cooking time.
