Tonight dinner was outside grill night except for the broccoli and carrots.
First I wrapped a large sweet potato in foil and turn the grill to a temp of
450 f, according to the thermometer in the hood of the grill and let it bake
as I prepared the parmesan chicken breast.
I laid the breast between two pieces of wax paper and flatten it a bit.
Minced up a clove of garlic and placed it in a bowl with a little olive oil
(1 1/2 tbls). Took a handful of bread crumbs and a handful of parmesan
cheese and mixed them together.
Rinsed off the breast and patted it dry. Dipped it on both sides with the
garlic/oil and coated it with the cheese mixture.
turned the grill down a round 350 f degrees. Poured the rest of the oil in a
cast iron skillet and laid the breast in it. Put the hood down and let it
baked for 30 minutes as it finish baking the potato.
there was fifteen minutes left as I turn the heat on the pan with the
steamer that had sliced carrots and broccoli in it. When the timer rang. I
turned off the pan. Got the chicken and sweet potato out of the grill, let
every thing rest for five minutes and my wife and I had a great meal that
was easy and quick to prepare. And finished it off with some left over
apple cobbler and a cup of green tea.

P. S. the sweet potato was a large one and it baked for about 42 minutes.
