one-hour dinner bread 3 cups warm water (105-110 degrees) 2 tablespoons plus 1 teaspoon yeast 6 tablespoons sugar 8 cups bread or all-purpose flour, whichever you prefer (You can also do 2 cups wholewheat and 6 cups bread flour) 1-1/2 teaspoons salt 4 tablespoons butter or oil of choice, canola, vegetable, criscoe shortening, reduce salt to 1 teaspoon if using butter or margarine that is already salted Makes 3 loaves of bread. Dissolve yeast and sugar in water. Add all other ingredients and knead for 10 minutes by hand or until forms a ball if using dough hooks. Cover with a cloth and place in a warm spot. Let rise about one hour. punch down, divided into 3 parts, and place in liberally greased loaf pans. Bake at 350 degrees F for 20-25 minutes or until golden brown. Bread will rise while cooking. Simple Yeast Dinner Rolls 1-1/2 cups warm water (105-110 degrees) 1 tablespoon active dry yeast 3tablespoons sugar 4 cups bread flour, (you can do 1 cup wholewheat and 3 cups bread flour as well) 1 stick butter, softened 1 egg Dissolve yeast and sugar into warm water. Stir in flour. Add butter and egg and knead for 10 minutes with dough hooks or, if by hand, until dough forms a ball. Hint: buttering your hands if kneading by hand keeps sticking down. Cover with a cloth and let rise for about 3 hours, till doubles in size. Now punch down, form a ball and set balls of dough into buttered muffin tins. You can also separate into individual balls and then roll each of these into smaller balls and place 3 in each tin to make clover leaf rolls. This makes 2 dozen rolls, so I separate into 4 parts and then 6 parts, each one being the size of one roll. Cover and let rise again about 1 hour.
