Charles, The boxed stuff may, indeed, be cheaper initially -- but far
more expensive in terms of health costs down the road.

Here's how my Mom used to make -- and I still make our mac and cheese
in the oven: Cook 3/4 to 1 pound of elbow macaroni. Layer the cooked
pasta in a casserole dish with alternating layers of pasta, salt and
pepper, and grated extra sharp cheddar cheese, ending with cheese on
top. Sprinkle with bread crumbs if desired. Dot top with butter. Now,
open a 12-oz. can of evaporated milk, and pour in the casserole (along
the side) until the liquid is level with the top layer of pasta. Cover
the dish. Bake at 375 degrees for half an hour. Uncover, and continue
baking for about 15 minutes.

Here's Alton Brown's 10-minute mac and cheese (Yes, it's a stove-top
recipe (like the method for preparing the boxed stuff):

1/2 pound elbow
macaroni
4 tablespoons butter
2 eggs
6 ounces
evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
 Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp
cheddar
, shredded
Directions
In a large pot of boiling, salted water cook the pasta to
al dente
 and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and
mustard
. Stir into the pasta and add the cheese. Over low heat continue to
stir for 3 minutes
or until creamy.

, here's an excellent recipe for the crock pot:
All-Day Crock Pot Mac & Cheese
8 oz. macaroni, cooked and drained
1 12-oz. can evaporated milk1-1/2 cups whole milk
2 eggs
4 cups grated cheddar cheese, divided
1 tsp. salt
1/2 tsp. black pepper


Coat slow cooker with cooking oil. Add macaroni. Add remaining
ingredients except for 1 cup cheese. Stir well. Sprinkle top with
remaining cheese.

Cover and cook on low for 5-6 hours without stirring.

Enjoy.
