Eons ago when I was in high school and still sighted the Wendys I worked at
was a test store for some interesting potential menu items, one of which was
a beef stroganoff baked potato. We started using the stroganoff on our
burgers, and it was a nice switch. One of my coworkers also turned me on to
using sour cream on a burger, which also worked.
Honey mustard is great on chicken or turkey. A blend of sour cream, apple
mint jelly, and horseradish works great on grilled tuna steaks on a
sandwich. (I don't know the proportions on this, as someone swiped my box of
cookbooks that had this recipe on a giveaway card from the seafood counter
of a local grocery store).
Remember that mayonnaise was a sauce long before it was a condiment, which
implies that all kinds of sauces, either as they are or thickened a bit, can
work on sandwiches.
