At most barbecue places, they have rolls of paper towels on the tables, and
hand towelettes, too. ribs are definitely for fingers, finger food.
They also have bottles of different bbq sauces, spicy and mild. all places,
of course, are different!

Barbecued ribs, at least for me, are also finger food, even though they are
messy. The taste is what counts, and it just doesn't seem right to use a
knife and fork to eat them. To cut them apart, yes, but not to get them
from plate to mouth.
