When you on roll it from the box, the shiny side is down, not facing you,
that is face down. You should be placing food on the non-shiny side. The
more reflective side should be facing the food source, the outside.
Basically, directions are very easy: Pull it out of the box and set it
down
on the counter, on your pan etc. and you will be placing it in the correct
position to put your food on the top.
