This is a tried and true recipe for 3 generations in my family.  Hope it
helps.


Swedish Tea/Coffee Ring



Preheat oven to 400’F.

Place a parchment sheet or grease a cookie sheet.



Ingredients:

2 cups sifted all purpose flour

4 teaspoons baking powder

1/2 cup shortening

2/3 cup milk

1 medium or large egg



Filling:

2 tablespoons melted butter

1/4 cup raisins

1/4 cup glased fruit peel

1/4 cup chopped red glased cherries

1/2 cup brown sugar

½ teaspoon cinnamon



Blend flour, baking powder and shortening until crumbly texture.

Add beaten egg and milk. Blend into a pastry ball.

Roll dough into a rectangle 10 by 14 inches.

In another bowl stir together the butter, sugar, fruit peel, cherries,
raisins and spice.



Spread blended mixture over surface of rectangle.

Roll from 14 inch side to form a log.

Bring log ends together to form a ring.

Place on parchment paper or greased cookie sheet.

Cut with sharp greased scissors slices 2/3 into sides of ring.  Space cuts
about 1 inch apart moving around the exterior of the ring.

Twist each segment onto it’s side.  Do not tear dough apart from the ring
centre.

Bake at 400F for 20 – 25 minutes.

Dough will appar golden with a tea biscuit appearance.

Let cool.

Brush with almond glaze.

Almond glaze:

½ cup icing sugar

½ teaspoon almond flavouring

2 teaspoons water or more if needed to form a thick liquid .

Brush onto ring surface. Let harden.

Cut into slices to serve.

Hello everyone.

Every friday I play crib, a card game, and one person brings baking.  My
roommate brought stuff last time and the friends whom home we went to did
already bake something.  I thought about doing something like peanut butter
cookies but really like a good coffee cake.  If anyone has a recipe that
they could send that would be great.  We always have coffee and  I thought a
coffee cake would complament it nicely.  Thanks in advance.
