Real Healthy GRILLED PINEAPPLE A Recipe by Diana Keuilian PREP TIME 15 mins COOK TIME 10 mins TOTAL TIME 25 mins INGREDIENTS Serves 6
1 pineapple, peeled, cored and cut into strips 2 Tablespoons coconut oil ¼ cup shredded coconut, unsweetened INSTRUCTIONS 1. Peel, core and cut the pineapple into strips. Insert a wooden skewer through each strip. Brush each side of the strips with a little coconut oil. Place on a preheated grill pan over medium heat. Cook each side until seared and tender (about 5 minutes per side). 2. Place the shredded coconut in a dry skillet. Heat over medium-low, stirring constantly, until golden. Remove from heat and sprinkle over the pineapple. Serve with Ginger Whipped Cream. Enjoy!
