Baked Breaded Zucchini 2-3 young zucchini 1 scant cup bread crumbs 1-2 cloves garlic Salt to taste Melted butter Mayonnaise 3 to 3-1/2 ounces hard cheese Rinse and dry zucchini, slice 1/2 inch thick, then cut into strips. Combine mayonnaise with crushed garlic. Finely grate the cheese. Combine bread crumbs with salt and cheese on a plate. Preheat oven to 400 degrees. Line a baking pan with parchment, lightly butter the parchment. Dip zucchini strips in mayonnaise, coat with breading on all sides and arrange in one layer in the prepared pan. Drizzle with melted butter and bake for 10-15 minutes. Strips are best when they are not totally soft but rather slightly crispy.
