I find that if you put bbq sauce on too early, whether for chicken or ribs, it sort of caramelizes. I do not like that, so decided to cook the chicken or ribs through and say, around the final 10 or 15 minutes, add my sauces. Perhaps if I werre to add sauce, right from the get go, I should lower my temp to 350 degrees instead of 400 and cover the pan, then remove the foil the last ten minutes!
