Don't bother skinning or seating the fresh tomatoes. They'll come out great and 
taste good, too. Small cherry or grape tomatoes, just throw them in whole after 
washing them. They sort of pop in your mouth when you bite them and you get 
this tasty burst of tomato juice. Don't bother adding in any extra liquid from 
what's already called for in your recipe. The juice from the tomatoes will be 
enough.
