I made these cookies on the spur of the moment and they came out pretty good.
Measurements are approximates.
Ingredients:
1-1/2 rolled oats
1-1/2 cups cereal (used Grape Nut flakes)
1 cup dried fruit
1 tsp. pumpkin pie spice
1/2 cup unsweetened coconut
1 cup peanut butter (more to roll them in if it doesn't taste peanut
buttery enough)
1/2 cup powdered sugar
3-4 tbsp. juice or water
Method:
mix all ingredients together through the coconut.
If you wish mix the peanut butter, water, and sugar in a separate bowl
or mix well into the dry ingredients. The consistancy should be thick
enough to make balls that hold together.
Line a cookie sheet with wax or parchment paper. Gently flatten balls
on the paper about 1/4 inch thick. Place them in the refrigerator for
one or two hours before eating.
