Hi Tom I just use half breast and I do drain the liquid of canned pineapples For the breast I use my roller pin and place the chicken on wax or parchement paper and stomp it down till about inch in a half thick since usually they are pretty thick... I do cook the pineapple after the chicken..smile There is enough liquid in so it won't dry up.
