Mexican Orange Candy Cups
3 cups sugar
1 cup evaporated milk
1/4 cup orange juice
1/4 teaspoon salt
3 teaspoons grated orange peel
1 teaspoon orange extract
1 cup pecans or walnuts, finely chopped
Combine 1 cup sugar and some of the evaporated milk in a large skillet.
Heat, stirring until sugar has dissolved. Slowly stir in orange juice and
remaining evaporated milk. Mix in remaining 2 cups sugar and salt. Cook over
medium heat, stirring until candy reaches soft-ball stage on a candy
thermometer. Remove from heat; stir in grated peel and flavoring. Cool about
10 minutes. Beat until smooth and creamy; stir in nuts. Pour into tiny
greased paper candy cups.
Makes 24 to 32.

If we could look into each other's hearts and understand the unique
challenges each of us faces, I think we would treat each other much more
gently, with more love, patience, tolerance, and care.
