Mexican Orange Candy Cups 3 cups sugar 1 cup evaporated milk 1/4 cup orange juice 1/4 teaspoon salt 3 teaspoons grated orange peel 1 teaspoon orange extract 1 cup pecans or walnuts, finely chopped Combine 1 cup sugar and some of the evaporated milk in a large skillet. Heat, stirring until sugar has dissolved. Slowly stir in orange juice and remaining evaporated milk. Mix in remaining 2 cups sugar and salt. Cook over medium heat, stirring until candy reaches soft-ball stage on a candy thermometer. Remove from heat; stir in grated peel and flavoring. Cool about 10 minutes. Beat until smooth and creamy; stir in nuts. Pour into tiny greased paper candy cups. Makes 24 to 32. Mamma Peach
