It depends on how quickly they are used. If you have access to bags and bags of pecans, say, like we did when my mother-in-law was alive, and she had a bunch of pecan trees, and we had several grocery bagfuls of unshelled pecans, one could not possibly consume all of them quickly; so we shelled and froze a lot of them, and used them for cakes and cookies, or just to take out a bag and enjoy and eat. the oil in them gets rancid if kept at room temperature for long periods of time. Also used them for making candy. I believe this freezing process applies to all types of nuts, not just pecans.
Fear is just excitement in need of an attitude adjustment! -----Original Message----- From: Brenda Mueller via Cookinginthedark [mailto:[email protected]] Sent: Friday, December 02, 2016 9:58 PM To: [[email protected]] Cc: Brenda Mueller Subject: Re: [CnD] shell pecans in freezer I never heard of storing nuts in a refrigerator or freezer, just in a tightly closed container. Of course if my family had nuts they were for eating. They were kept on the coffee table with a nut cracker. Refrigeration shouldn't be needed to store nuts.
