I also like to use great northern beans but they are dried beans and need to be 
soaked in water overnight as well as cooked for a long time like several hours 
in a slow cooker.

First, what kind of beans do you have?
Hank and I like pinto or limas with either rice or ham.
Many times we use 15 bean mix.
In terms of spices we like to use salt, pepper, garlic, smoked paprika those 
are the basics.
I haven't found a bean that doesn't go well with rice or ham.
