Sour Cream Cucumbers 2 large cucumbers, peeled and sliced
1 large onion, sliced into rings 3/4 cup light or nonfat sour cream 3 tablespoons cider vinegar 2 tablespoons sugar Salt and pepper to taste In a bowl, combine the cucumbers and onion. Combine remaining ingredients and pour over cucumbers; mix well. Chill for at least 1 hour. Note: For added interest, add a little fresh or dried dill. Makes 6 to 8 servings.
